Ingredients

Scale

Steak and Skewers

  • 1.5 pounds sirloin or ribeye steak, cut into bite-sized cubes
  • 810 wooden or metal skewers (if wooden, soaked in water for 30 minutes)

Marinade

  • 1/3 cup soy sauce (or tamari/coconut aminos for gluten-free option)
  • 2 tablespoons brown sugar
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 teaspoon sesame oil
  • Freshly cracked black pepper, to taste

Garnish

  • 2 green onions, sliced
  • Optional: toasted sesame seeds, chopped cilantro or basil

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together soy sauce, brown sugar, minced garlic, grated ginger, sesame oil, and freshly cracked black pepper until the sugar dissolves and the mixture forms a smooth glaze.
  2. Marinate the Steak: Cut steak into uniform bite-sized cubes and toss them into the marinade, ensuring each piece is thoroughly coated. Cover and refrigerate for at least 30 minutes, or up to 2 hours for deeper flavor and tenderness.
  3. Thread the Skewers: Remove wooden skewers from water if soaked. Thread the marinated steak cubes onto the skewers, leaving a small space between pieces for even cooking.
  4. Grill or Pan-Sear: Preheat grill or heavy skillet over medium-high heat. Cook skewers for 3-4 minutes per side, occasionally basting with leftover marinade to build a sticky glossy glaze and smoky char.
  5. Rest and Garnish: Let the cooked skewers rest for a few minutes. Sprinkle with chopped green onions and optional toasted sesame seeds or fresh herbs before serving.

Notes

  • Choose tender cuts like sirloin or ribeye for best results.
  • Do not overcrowd skewers; leave space between steak pieces.
  • Marinate at least 30 minutes, overnight preferred for maximum tenderness.
  • Use medium-high heat to sear without overcooking.
  • Reserve marinade for basting during cooking to enhance glaze.
