  • 1 teaspoon fish sauce

Instructions

  1. Prepare the Noodles: Cook the wide rice noodles according to package instructions until just tender. Drain and rinse with cold water to stop cooking and prevent sticking. Set aside.
  2. Sauté Aromatics and Chilies: Heat vegetable oil in a large wok or skillet over medium-high heat. Add minced garlic and chopped bird’s eye chilies, stirring quickly to release their fragrant oils without burning.
  3. Cook Your Protein: Add your choice of protein (chicken strips, shrimp, or tofu cubes) and cook until browned and cooked through, infusing the oil with rich flavors.
  4. Stir-Fry Vegetables: Add sliced onions and bell peppers, stir-frying until tender but still crisp, adding freshness and texture.
