Instructions

  1. Prepare the Shrimp: Season peeled and deveined shrimp with salt, pepper, and garlic powder. Heat 1 tablespoon olive oil in a skillet over medium heat. Sauté shrimp about 2-3 minutes per side until pink and opaque. Remove from heat and set aside.
  2. Make the Caesar Dressing: In a bowl, whisk together mayonnaise, minced garlic, fresh lemon juice, Dijon mustard, anchovy paste (if using), grated Parmesan, salt, and pepper until smooth. Slowly drizzle in 1/4 cup olive oil while whisking to emulsify the dressing to a creamy, light texture.
  3. Prepare Lettuce and Croutons: Wash and dry romaine lettuce thoroughly, then chop into bite-sized pieces. For croutons, toss bread cubes with olive oil, garlic powder, and salt. Bake at 375°F (190°C) until golden and crispy, about 10-15 minutes.
  4. Assemble the Salad: In a large bowl, toss chopped romaine with Caesar dressing until evenly coated. Add cooked shrimp and croutons. Sprinkle freshly grated Parmesan cheese on top and give everything a gentle toss. Serve immediately.
