  • 300ml cream or milk (or substitute with Greek yogurt for low-fat)
  • 150g sharp Cheddar or Gruyère cheese, grated
  • 30g butter (for greasing and richness)

Herbs and Seasoning

  • 2 tbsp fresh parsley or thyme, chopped
  • Salt and black pepper, to taste

Instructions

  1. Prepare the potatoes: Peel and thinly slice the potatoes evenly using a mandoline slicer or sharp knife to ensure consistent cooking throughout the bake.
  2. Cook the bacon and aromatics: Fry the chopped bacon until crispy, then remove and set aside. Using the rendered bacon fat, sauté the finely chopped onions and minced garlic in the same pan until soft and fragrant.
  3. Assemble the layers: Grease a baking dish with butter. Layer the potato slices evenly, sprinkle over some cooked bacon, sautéed onions and garlic, and a portion of grated cheese. Repeat layering until all ingredients are used, finishing with a generous layer of cheese on top.
  4. Add the cream mixture: Pour the cream or chosen liquid evenly over the layered potatoes, making sure it seeps through to keep all layers moist and rich during baking.
  5. Bake to perfection: Cover the dish with foil and bake in a preheated oven at 180°C (350°F) for about 45 minutes. Remove the foil during the last 15 minutes to allow the top cheese layer to brown and crisp beautifully.
