Salad

  • 4 cups mixed greens (arugula, spinach, romaine)
  • 1 cup cherry tomatoes, halved
  • 1 medium cucumber, sliced
  • 1/4 red onion, thinly sliced
  • 1 avocado, sliced (add just before serving)

Dressing

  • 1/4 cup olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 1 clove garlic, minced
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prep the Ingredients: Rinse and dry the mixed greens. Slice the cherry tomatoes in half, thinly slice the red onion and cucumber. Wait to slice the avocado until just before serving to prevent browning. Season the steak generously with salt, pepper, and garlic powder if using.
  2. Grill the Steak: Preheat your grill or grill pan to high heat and brush lightly with olive oil. Grill the steak for 4 to 5 minutes per side or until it reaches your desired level of doneness. Remove from heat and let rest for 5 minutes to lock in juices. Slice thinly against the grain.
  3. Make the Dressing: In a small bowl, whisk together olive oil, freshly squeezed lemon juice, minced garlic, salt, and pepper. Adjust seasoning and acidity to your liking to complement the steak and vegetables.
  4. Assemble the Salad: In a large bowl, toss the mixed greens, cherry tomatoes, cucumber, and red onion with half of the dressing. Arrange the sliced steak on top, add avocado slices, then drizzle the remaining dressing over everything. Toss gently if desired and serve immediately.
