Ingredients

Scale

Shrimp and Marinade

  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp olive oil
  • Salt, to taste
  • Black pepper, to taste

Piccata Sauce

  • 4 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 1/4 cup fresh lemon juice (about 12 lemons)
  • 2 tbsp capers, drained

Garnish and Other

  • 2 tbsp fresh parsley, chopped
  • Wooden or metal skewers (if wooden, soaked in water for 30 minutes before use)
  • Lemon wedges (optional, for serving)

Instructions

  1. Prepare the Shrimp: Rinse and thoroughly pat dry the shrimp. Toss them in olive oil, salt, and black pepper to season evenly and help prevent sticking on the grill.
  2. Soak the Skewers: If using wooden skewers, soak them in water for at least 30 minutes to avoid burning during grilling.
  3. Thread Shrimp onto Skewers: Carefully thread the shrimp onto the skewers, leaving a small space between each shrimp to ensure even cooking and easy flipping.
  4. Grill the Shrimp: Preheat your grill to medium-high heat. Place the skewers on the grill and cook for 2-3 minutes per side, or until shrimp turn pink and develop a slight char.
  5. Make the Piccata Sauce: In a pan over medium heat, melt the butter. Add the minced garlic and sauté briefly until fragrant, about 30 seconds. Pour in the fresh lemon juice and add the capers. Let the sauce simmer gently for 1-2 minutes to meld the flavors.
  6. Combine and Serve: Transfer the grilled shrimp skewers to the pan with the piccata sauce and toss quickly to coat. Plate the skewers, garnish with freshly chopped parsley, and serve immediately with optional lemon wedges.

Notes

  • Use fresh shrimp for the best texture and flavor.
  • Do not overcook shrimp to avoid a rubbery texture.
  • Preheat your grill thoroughly to ensure perfect searing and to prevent shrimp from sticking.
  • Adjust the lemon juice and butter proportions in the sauce to balance tartness and creaminess to your preference.
  • Thread the shrimp evenly on skewers to promote uniform cooking.
  • This recipe is naturally gluten free; ensure to use gluten-free skewers if needed.
