Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 1 tbsp olive oil (for brushing)
  • Salt and pepper, to taste

Green Goddess Sauce

  • 1/2 cup fresh parsley, chopped
  • 1/4 cup fresh tarragon, chopped
  • 1/4 cup fresh chives, chopped
  • 2 tbsp fresh basil, chopped
  • 2 garlic cloves, minced
  • 1 tbsp lemon juice
  • 1/4 cup Greek yogurt or mayonnaise
  • 1 tsp anchovy paste (optional)
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Prepare the Green Goddess Sauce: Gather fresh herbs such as parsley, tarragon, chives, and basil, then finely chop or pulse them in a food processor with minced garlic, lemon juice, Greek yogurt or mayonnaise, a drizzle of olive oil, and anchovy paste if using. Blend until smooth and creamy. Season with salt and pepper to taste and set aside to let the flavors meld.
  2. Season the Chicken: Pat the chicken breasts dry to ensure a perfect sear. Lightly brush both sides with olive oil and season generously with salt and pepper to lock in moisture and prepare for grilling.
  3. Preheat the Grill: Heat your grill or grill pan to medium-high heat. Ensure it’s hot enough to create beautiful grill marks while cooking the chicken evenly throughout.
  4. Grill the Chicken: Place the chicken breasts on the grill and cook for 5 to 7 minutes per side, depending on thickness. Flip once when grill marks form and the chicken releases easily. Use a meat thermometer to verify an internal temperature of 165°F (75°C) for perfect doneness.
  5. Rest and Serve: Remove the chicken from the grill and allow it to rest for 5 minutes to redistribute juices. Slice if desired, then spoon the Green Goddess sauce over the top or serve on the side as a dip.

Notes

  • Marinate chicken briefly with lemon juice and olive oil before grilling to tenderize.
  • Use fresh herbs for the best flavor in the sauce.
  • Avoid overcooking chicken to keep it juicy.
  • Prepare the Green Goddess sauce a few hours ahead to enhance flavor melding.
  • Oil grill grates well and avoid moving chicken too early to achieve perfect grill marks.
