Ingredients

Scale

Beef and Marinade

  • 300g thinly sliced sirloin or ribeye beef
  • 2 tbsp soy sauce
  • 1 tsp freshly ground black pepper
  • 1 tsp sesame oil

Noodles

  • 200g fresh or frozen udon noodles

Aromatics and Sauce

  • 2 cloves garlic, minced
  • 1 tbsp fresh ginger, minced
  • 2 tbsp vegetable oil (for stir-frying)
  • 1 tsp freshly ground black pepper (additional for cooking)
  • 1 tbsp soy sauce (additional)
  • 2 green onions, chopped
  • 1 tsp sesame oil (for finishing)

Instructions

  1. Prepare the Beef: Slice the beef thinly against the grain to ensure tenderness. Marinate it briefly with 2 tablespoons soy sauce, 1 teaspoon freshly ground black pepper, and 1 teaspoon sesame oil to infuse flavor.
  2. Cook the Udon Noodles: Boil fresh or frozen udon noodles in boiling water until just tender, about 2-3 minutes. Drain and rinse with cold water to stop the cooking process and keep them chewy.
  3. Stir-Fry Aromatics: Heat 2 tablespoons vegetable oil in a hot pan. Add the minced garlic and ginger, sautéing until fragrant and aromatic, about 30 seconds to 1 minute.
  4. Cook the Beef: Add the marinated beef to the pan and stir-fry over high heat until browned but still juicy, approximately 2-3 minutes, locking in the peppery flavors.
  5. Combine and Season: Toss the cooked udon noodles into the pan with the beef. Add an additional 1 teaspoon freshly ground black pepper, 1 tablespoon soy sauce, and chopped green onions. Stir everything together to marry the flavors beautifully.
  6. Finish and Serve: Drizzle 1 teaspoon extra sesame oil over the dish for aroma. Give one last toss, then plate your Black Pepper Beef Udon Noodles while hot and fragrant.

Notes

  • Use freshly ground black pepper for the sharpest and most vibrant flavor.
  • Avoid overcooking the beef to keep it tender and juicy.
  • Rinse the udon noodles after cooking to prevent them from becoming mushy.
  • Cook over high heat to sear the beef properly and retain its texture.
  • Add sauce gradually to balance flavors without overwhelming the noodles.
