Ingredients

Scale

Watermelon Base

  • 1 large seedless ripe watermelon, sliced into 1.5-inch thick rounds

Mixed Fresh Fruit

  • 1 cup strawberries, hulled and sliced
  • 1/2 cup blueberries
  • 2 kiwis, peeled and sliced
  • Fresh mint leaves for garnish

Cream Layer

  • 1 cup heavy cream, cold (or coconut whipped cream for vegan option)
  • 12 tablespoons honey or agave syrup
  • 1 teaspoon vanilla extract (optional)

Additional Toppings

  • 1/4 cup chopped nuts (optional; e.g., walnuts, almonds, or pecans)
  • Zest of 1 lemon or lime

Instructions

  1. Prepare the Watermelon Base: Select a firm, ripe, seedless watermelon and slice it uniformly into thick rounds about 1.5 inches thick. These will form the cake layers, so ensure consistent size and thickness for easy stacking.
  2. Whip Up the Cream Layer: Whip the cold heavy cream or dairy-free alternative until soft peaks form. Gently fold in honey or agave syrup and vanilla extract if using, to add a subtle sweetness and flavor. This cream will act as frosting between the watermelon layers.
  3. Assemble the Layers: Place one watermelon slice on a serving plate. Spread a generous layer of the whipped cream or yogurt evenly on top. Sprinkle with a mix of chopped fresh fruits, lemon or lime zest, and optional chopped nuts. Repeat the layering with another watermelon slice and continue if desired to create a multi-layer cake.
  4. Decorate the Top: Finish by spreading a final dollop of whipped cream on the top layer. Artistically arrange an assortment of colorful fresh fruits and mint leaves. Drizzle lightly with honey for added gloss and natural sweetness.
  5. Chill Before Serving: Refrigerate the assembled cake for at least 30 minutes to allow flavors to meld and the whipped cream to firm up, ensuring a refreshing and cool dessert experience.

Notes

  • Use firm watermelon to maintain the cake’s structural integrity when slicing and stacking.
  • Chill the whipped cream and fruits before assembly to keep the cake fresh and cool longer.
  • Pat watermelon slices dry with a paper towel to reduce excess moisture and prevent sogginess.
  • Spread cream evenly with gentle pressure to avoid breaking watermelon slices while layering.
  • Assemble the cake close to serving time to avoid the fruit juices making the cake too wet.
