Ingredients

Scale

Proteins & Cheese

  • 1 pound ground beef
  • 8 ounces Velveeta cheese, cut into cubes

Pasta

  • 12 ounces rotini pasta

Vegetables & Aromatics

  • 1 cup diced tomatoes (with juices)
  • 1 medium onion, diced
  • 2 cloves garlic, minced

Liquids & Seasonings

  • 1 cup beef broth
  • 1 teaspoon Italian seasoning
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil. Add the rotini pasta and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.
  2. Brown the Beef: Heat olive oil in a large skillet over medium-high heat. Add ground beef and cook until browned and no longer pink, breaking it up with a spoon. Drain excess fat to keep the dish from being greasy.
  3. Sauté Aromatics: To the same skillet, add diced onions and minced garlic. Cook for 3-4 minutes until softened and fragrant, stirring frequently.
  4. Build the Sauce: Pour in beef broth and diced tomatoes with their juices. Stir in Italian seasoning, salt, and pepper. Simmer the mixture for 5 minutes to blend flavors and reduce slightly.
  5. Melt in the Velveeta: Add Velveeta cheese cubes to the skillet and stir constantly until the cheese melts into a creamy smooth sauce.
  6. Combine Pasta and Sauce: Add the cooked rotini pasta to the skillet and toss to coat evenly with the cheesy beef sauce. Cook for another 1-2 minutes to heat through and meld flavors.

Notes

  • Use classic Velveeta slices or blocks for best melt and flavor.
  • Cook pasta al dente; slightly undercook if planning to reheat.
  • Drain excess grease from beef for a silky sauce.
  • Simmer sauce gently to prevent breaking or burning.
  • Stir often during melting to avoid cheese sticking to the pan.
