Ingredients

Scale

Sausages

  • 6 oz pre-cooked andouille sausage, sliced into bite-sized rounds
  • 6 oz summer sausage, sliced into bite-sized rounds

Vegetables & Herbs

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 green bell pepper, thinly sliced
  • 1 medium onion, thinly sliced
  • 3 garlic cloves, minced
  • 2 tbsp fresh parsley, chopped

Seasonings & Oil

  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 1/4 tsp crushed red pepper flakes (optional, adjust to taste)
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Prepare the ingredients: Slice the andouille and summer sausage into bite-sized rounds. Chop the bell peppers and onion into thin strips, and mince the garlic cloves. Prepping everything beforehand ensures a smooth cooking process.
  2. Sauté the vegetables: Heat olive oil in a large skillet over medium heat. Add the sliced onions and bell peppers, cooking until they soften and start to caramelize, about 5-7 minutes. Stir occasionally to prevent burning and promote even cooking.
  3. Add garlic and spices: Stir in the minced garlic, smoked paprika, and crushed red pepper flakes. Cook for 1-2 minutes until fragrant, allowing the spices to bloom in the oil for maximum flavor.
  4. Cook the sausages: Add the sliced andouille and summer sausage to the skillet. Sauté everything together for about 5 minutes, allowing the sausage to brown slightly and infuse the vegetables with smoky, spicy flavors.
  5. Season and finish: Season the skillet with salt and black pepper to taste. Just before serving, toss in the fresh parsley to add brightness and a fresh herbal finish. Serve immediately and enjoy your Summer Sausage Skillet with Andouille Sausage!

Notes

  • Use quality, authentic Cajun-style andouille and summer sausages for the best flavor.
  • Don’t overcrowd the pan — cook in batches if necessary to ensure proper browning.
  • For a crunchier texture, slightly undercook the vegetables.
  • Add a splash of liquid smoke to enhance smoky depth if desired.
  • Add fresh herbs like parsley or cilantro right before serving to preserve freshness.
