Instructions

  1. Prepare the Strawberries: Wash and hull your fresh strawberries, removing any green stems. Cut them into halves or quarters to help them blend smoothly later on. Using ripe strawberries ensures the best flavor.
  2. Make Simple Syrup: In a small saucepan, combine sugar and water. Heat gently while stirring until the sugar dissolves completely and the syrup is clear. Let it cool to room temperature before using.
  3. Blend Ingredients: Add the prepared strawberries, cooled simple syrup, and freshly squeezed lemon juice to a blender or food processor. If desired, add a few mint leaves. Blend until smooth and uniform with no large chunks.
  4. Chill the Mixture: Pour the strawberry puree into a container and refrigerate for at least 30 minutes to improve freezing texture.
  5. Freeze and Stir: If you have an ice cream maker, pour the chilled mixture in and churn for about 20 minutes until soft-serve consistency is reached. Without an ice cream maker, freeze the mixture in a shallow dish, stirring vigorously every 30 minutes until firm and scoopable.
