Steak Night Creamy Pasta

Steak Night Creamy Pasta is a quick and indulgent dinner combining tender, juicy steak with velvety pasta and a rich, creamy Parmesan sauce. Perfect for busy weeknights or special occasions, it offers customizable flavors and simple preparation that will impress family and guests alike.

Ingredients

Scale

Steak

  • 1 lb sirloin or ribeye steak
  • Salt and pepper, to taste
  • 2 tbsp butter (for searing steak and sauce)

Pasta

  • 8 oz fettuccine or linguine pasta
  • Salt (for pasta water)

Creamy Sauce

  • 3 cloves garlic, finely minced
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese
  • 2 tbsp butter
  • Salt and pepper, to taste

Garnish

  • Fresh parsley or basil, chopped
  • Extra Parmesan cheese (optional)

Instructions

  1. Prepare the Steak: Season the steak generously with salt and pepper. Heat a skillet over medium-high heat with 2 tablespoons of butter. Sear the steak for about 3-4 minutes per side for medium-rare or until desired doneness. Remove from skillet and let rest to lock in juices.
  2. Cook the Pasta: Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain, reserving 1 cup of pasta water for later use.
  3. Create the Creamy Sauce: In the same skillet used for the steak, melt 2 tablespoons of butter. Sauté minced garlic until fragrant. Pour in heavy cream and bring to a gentle simmer. Stir in freshly grated Parmesan cheese until the sauce thickens and becomes smooth.
  4. Combine Pasta and Sauce: Add drained pasta to the creamy sauce, tossing gently to coat all strands evenly. If sauce is too thick, gradually add reserved pasta water to reach desired consistency.
  5. Slice the Steak and Serve: Slice the rested steak thinly against the grain. Arrange sliced steak over or mixed into the creamy pasta. Garnish with chopped fresh herbs and a sprinkle of extra Parmesan cheese for a restaurant-quality finish.

Notes

  • Choose tender steak cuts like ribeye or filet mignon for juicier results.
  • Always rest the steak after cooking to keep it moist and flavorful.
  • Grate Parmesan cheese fresh for better melting and flavor in the sauce.
  • Reserve pasta water to adjust sauce consistency without watering down flavors.
  • Cook pasta al dente to avoid mushiness when mixed with the sauce.
