Instructions

  1. Prepare Your Steak: Pat your steak dry with paper towels to remove excess moisture. Cut it into uniform bite-sized cubes, about 1 to 1.5 inches each, so they cook evenly.
  2. Season Generously: Sprinkle salt and freshly ground black pepper over the steak bites. Add any additional dry seasonings or spices you prefer to build layers of flavor.
  3. Heat the Pan: Place a heavy skillet or cast iron pan over medium-high heat. Add olive oil and wait until the oil shimmers and just starts to smoke slightly – this indicates it’s hot enough for a perfect sear.
  4. Sear the Steak Bites: Add the steak bites to the pan in a single layer without overcrowding. Let them sear untouched for 1 to 2 minutes to develop a rich crust, then toss and sear the other sides until browned but still juicy inside.
  5. Add Butter and Garlic: Lower the heat and add butter and minced garlic. Stir or swirl the pan gently to coat the steak bites in the flavorful butter as the garlic cooks slightly, releasing its aroma without burning.
  6. Finish with Fresh Herbs: Just before removing from heat, sprinkle in fresh herbs like thyme or rosemary and give the bites one final toss to infuse subtle herbal notes.
