  • 2 cloves garlic, minced
  • 4 oz cream cheese, softened
  • 1 cup shredded mozzarella or cheddar cheese
  • Optional: 1/4 tsp red pepper flakes

Instructions

  1. Prepare the Filling: In a skillet, heat a small amount of olive oil and sauté minced garlic until fragrant. Add fresh spinach and cook until wilted, then remove from heat. Combine the cooked spinach with cream cheese and shredded cheese in a bowl, mixing until well blended.
  2. Prepare the Chicken Breasts: Using a sharp knife, carefully butterfly each chicken breast by slicing horizontally through the middle without cutting all the way through. Open the chicken like a book and season both sides with salt and pepper.
  3. Stuff the Chicken: Evenly spread the spinach and cheese mixture inside the opened chicken breasts, then carefully fold or fold over to enclose the filling. Use toothpicks if needed to keep the chicken closed.
  4. Cook the Chicken: Heat olive oil in a large skillet over medium heat. Sear the stuffed chicken breasts for 4-5 minutes on each side until golden brown and cooked through. Internal temperature should reach 165°F (75°C).
  5. Rest and Serve: Let the stuffed chicken rest for a few minutes after cooking to retain its juices. Remove toothpicks, slice if desired, and serve warm.
