Ingredients

Scale

Sushi Rice and Seasoning

  • 1 cup sushi rice (short-grain, sticky rice)
  • 2 tablespoons rice vinegar
  • 1 teaspoon sugar
  • 1/2 teaspoon salt

Spicy Salmon Mixture

  • 200 grams fresh sushi-grade salmon, finely chopped
  • 2 tablespoons mayonnaise
  • 1 to 2 teaspoons sriracha sauce (adjust to taste)
  • 1 teaspoon soy sauce

For Assembly and Garnish

  • 1 tablespoon toasted sesame seeds
  • Nori sheets, cut into strips (optional)
  • 2 tablespoons finely chopped green onions

Instructions

  1. Cook and Season the Sushi Rice: Rinse the sushi rice under cold water until the water runs clear to remove excess starch. Cook the rice according to package instructions. Transfer the warm rice into a large bowl. Gently fold in a mixture of rice vinegar, sugar, and salt to season the rice, enhancing its tang and sweetness essential for sushi rice flavor.
  2. Prepare the Spicy Salmon Mixture: Finely dice the fresh salmon into small, uniform pieces. In a separate bowl, combine the salmon with mayonnaise, sriracha sauce to your preferred spice level, and soy sauce. Mix thoroughly so every piece is evenly coated with the spicy, creamy sauce.
  3. Shape the Rice Balls: Keep your hands wet to prevent sticking. Take a handful of the seasoned sushi rice and flatten it slightly. Place a spoonful of the spicy salmon mixture in the center. Carefully mold the rice around the filling, shaping it into a compact ball or triangle to seal in the flavors.
  4. Finish and Garnish: Roll each rice ball lightly in toasted sesame seeds or wrap with a strip of nori for extra flavor and texture. Sprinkle with finely chopped green onions for freshness and a vibrant color contrast.

Notes

  • Keep your hands moist throughout shaping to prevent the rice from sticking.
  • Use sushi-grade salmon for the best freshness and texture.
  • Fold the rice gently to maintain its fluffy yet sticky consistency without overmixing.
  • Adjust the amount of sriracha gradually to control the spice level.
  • Chill the spicy salmon mixture before assembly to help flavors meld and for safer handling.
