Ingredients

Scale

For the Rice Base

  • 2 cups sushi rice (short-grain rice), cooked and cooled
  • Oil for frying (vegetable or canola), enough for deep frying

For the Spicy Salmon Topping

  • 6 oz sashimi-grade fresh salmon, finely chopped
  • 3 tablespoons mayonnaise
  • 12 tablespoons Sriracha sauce (adjust to taste)
  • 1 teaspoon soy sauce (or tamari for gluten-free)
  • 2 green onions, finely chopped

Garnishes

  • Toasted sesame seeds, for sprinkling
  • Additional chopped green onions

Instructions

  1. Prepare the Sushi Rice: Cook sushi rice according to the package instructions. Once cooked, spread the rice evenly in a shallow pan and press firmly to form a compact layer. Refrigerate the rice until fully chilled to help it set, then cut into bite-sized squares.
  2. Fry the Rice Bites: Heat vegetable or canola oil in a deep skillet or pan over medium-high heat. Fry the rice squares in batches until they are golden brown and crisp on the outside but tender inside. Drain the fried rice bites on paper towels to remove excess oil.
  3. Mix the Spicy Salmon Topping: In a bowl, gently combine the finely chopped sashimi-grade salmon with mayonnaise, Sriracha sauce, soy sauce, and chopped green onions. Fold carefully to keep the salmon’s texture intact.
  4. Assemble the Crispy Rice Bites: Spoon a generous amount of the spicy salmon mixture onto each crispy rice square. Garnish with toasted sesame seeds and extra chopped green onions for added color and crunch.
  5. Serve and Enjoy: Serve immediately to maintain the crispiness of the rice bites. Offer extra soy sauce or wasabi on the side if desired.

Notes

  • Use cold cooked rice to help the rice base hold its shape better during frying.
  • Maintain high heat when frying to prevent oil absorption and retain crispiness.
  • Choose fresh, sushi-grade salmon for safety and optimal flavor.
  • Do not overmix the salmon topping to avoid breaking down its texture.
  • Assemble the bites just before serving to keep the rice crispy and topping fresh.
