S’mores Brownie Skillet

The S’mores Brownie Skillet is a rich and gooey dessert combining a fudgy brownie base with melty chocolate chunks, toasted mini marshmallows, and graham cracker crumbs. Baked in a cast-iron skillet, it delivers the nostalgic flavors of classic s’mores in a shareable, warm, and indulgent treat perfect for gatherings or cozy nights in.

Ingredients

Scale

Dry Ingredients

  • 1/2 cup unsweetened cocoa powder
  • 3/4 cup all-purpose flour (or gluten-free baking blend for gluten-free)
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 cup graham cracker crumbs

Wet Ingredients

  • 1/2 cup (1 stick) unsalted butter
  • 2 large eggs
  • 1 teaspoon vanilla extract

Toppings

  • 1 cup chocolate chips or chunks
  • 1 1/2 cups mini marshmallows

Instructions

  1. Prepare Your Skillet: Preheat your oven to 350°F (175°C). Lightly grease a 9-inch oven-safe cast-iron skillet or similar baking pan to prevent sticking and allow a crispy crust to form.
  2. Make the Brownie Batter: Melt the butter over low heat in a medium saucepan. Remove from heat and whisk in the sugar until smooth and combined. Beat in the eggs one at a time, followed by the vanilla extract. In a separate bowl, sift together the flour, cocoa powder, and salt. Gradually fold the dry ingredients into the wet mixture. Stir in the chocolate chips for melty pockets of chocolate throughout.
  3. Bake the Brownie Base: Pour the batter into the prepared skillet, smoothing the top with a spatula. Bake for 20 to 25 minutes until the edges are set but the center remains slightly soft and fudgy.
  4. Add the Marshmallow and Graham Cracker Topping: Remove the skillet from the oven and evenly sprinkle mini marshmallows over the top. Scatter graham cracker crumbs for added crunch. Return to the oven and bake for an additional 5 to 7 minutes until the marshmallows are puffed and lightly toasted.
  5. Serve Warm and Enjoy: Allow the skillet to cool for a few minutes so the layers set slightly. Serve generous wedges directly from the skillet with a spatula for a warm, gooey, chocolaty experience.

Notes

  • Use a cast-iron skillet for even heat distribution and crispy edges.
  • Be careful not to overbake; the center should stay fudgy for the best texture.
  • Keep a close watch on marshmallows during the final bake to avoid burning.
  • Customize with different types of chocolate chips (semi-sweet, milk, or dark) for varied flavor.
  • Graham cracker crumbs add delightful texture and can be sprinkled before marshmallows for crunch.
  • For gluten-free, substitute all-purpose flour with a gluten-free baking blend.
  • Wrap leftovers tightly and refrigerate up to 3 days or freeze up to 2 months.
  • Reheat in a 325°F (160°C) oven for 10-15 minutes; avoid microwaving to keep fudgy texture.
