Ingredients

Scale

Main Ingredients

  • 1 lb smoky Polish kielbasa, sliced into rounds
  • 1.5 lbs Yukon Gold or red potatoes, washed and diced into bite-sized pieces
  • 1 cup sauerkraut, drained (rinsed lightly if preferred for milder tang)
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil or butter
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1 tsp smoked paprika

Instructions

  1. Prepare the Ingredients: Wash and dice the potatoes into bite-sized pieces. Slice the kielbasa into rounds. Finely chop the onion and mince the garlic to ensure even and quick cooking.
  2. Cook the Potatoes: Heat olive oil or butter in a large skillet over medium heat. Add the diced potatoes along with a pinch of salt and pepper. Sauté until potatoes develop a crisp golden crust and become tender inside, about 10–12 minutes.
  3. Sauté the Onion and Garlic: Push the potatoes to one side of the skillet. Add chopped onions and garlic to the empty side. Cook until the onions are translucent and fragrant, stirring occasionally, about 3–4 minutes.
  4. Add Kielbasa: Stir in the sliced kielbasa and cook until browned and heated through. This releases smoky oils that blend beautifully with the onions and potatoes.
  5. Incorporate Sauerkraut and Seasonings: Add sauerkraut to the skillet and gently stir everything together. Cook for another 5 minutes to combine flavors and heat the sauerkraut thoroughly. Adjust seasoning with salt, pepper, and optional smoked paprika or herbs.
  6. Finish and Serve: Once the dish is piping hot and well combined, remove from heat. Taste and adjust seasonings if needed. Serve immediately with optional garnishes like fresh herbs or sour cream.

Notes

  • Dice potatoes uniformly to ensure even cooking and a tender yet crispy texture.
  • Do not overcrowd the pan to allow proper browning and avoid steaming.
  • Drain and rinse sauerkraut lightly if you prefer a milder tang; drain well to reduce excess moisture.
  • Use a cast iron skillet for better searing and even heat retention.
  • Allow the skillet to rest off the heat for a minute after cooking to meld flavors.
