Instructions

  1. Prepare the Salmon Patties: Finely chop the fresh salmon fillets or pulse briefly in a food processor for a chunkier texture. In a bowl, combine salmon, panko breadcrumbs, chopped green onions, lemon juice, whisked egg, salt, and pepper. Mix gently until combined without overworking. Form into evenly sized patties.
  2. Make the Miso Slaw: Shred cabbage and carrots into thin strips. In a separate bowl, whisk together white miso paste, rice vinegar, sesame oil, honey or maple syrup, and a pinch of salt. Toss the shredded vegetables in the dressing until evenly coated. Let the slaw sit briefly to meld flavors.
  3. Cook the Salmon Burgers: Heat a little oil in a non-stick pan over medium heat. Cook patties for 3-4 minutes per side, until golden brown and cooked through but still moist. Remove from heat and let rest for a minute.
