Ingredients

Scale

Essential Ingredients

  • 45 small to medium fresh beets, washed and trimmed
  • 2 tablespoons olive oil
  • 1 teaspoon sea salt
  • 1/2 teaspoon freshly ground black pepper

Optional Ingredients

  • 1 teaspoon fresh rosemary, thyme, or dill (chopped)
  • 1 tablespoon lemon juice (a quick splash before serving)

Instructions

  1. Preheat Your Oven: Get your oven ready by heating it to 400°F (200°C) which perfectly balances caramelization and thorough cooking without drying the beets.
  2. Prepare the Beets: Thoroughly wash the beets to remove dirt. Trim the tops and roots, then peel them using a vegetable peeler or wait to peel after roasting for less prep mess.
  3. Cut into Uniform Pieces: Chop the beets into evenly sized cubes or wedges to ensure they roast consistently. Smaller pieces cook faster but avoid pieces that are too large.
  4. Toss with Oil and Seasoning: In a bowl, combine the beet pieces with olive oil, sea salt, and black pepper, making sure each piece is well coated to lock in moisture and flavor.
  5. Arrange on a Baking Sheet: Spread the beet pieces out evenly on a foil-lined or parchment-lined baking sheet in a single layer to avoid overcrowding and promote even roasting.
  6. Roast and Stir: Place the baking sheet in the oven and roast for 25 to 30 minutes. Stir or flip the pieces halfway through to brown and caramelize evenly until tender but not mushy.
  7. Add Fresh Herbs and Serve: Once roasted, sprinkle with fresh herbs like rosemary or dill, and optionally squeeze lemon juice over the beets for a bright finish before serving warm.

Notes

  • Choose smaller beets for faster roasting and sweeter flavor.
  • Use a sharp knife for even cuts and better presentation.
  • Don’t skip stirring mid-roast to avoid burning.
  • Test doneness by piercing with a fork; beets should be tender yet firm.
  • Peeling after roasting can reduce prep mess, as beet skins slip off easily.
