  1. Prepare Simple Syrup: Combine equal parts sugar and water (e.g., 3/4 cup sugar and 3/4 cup water) in a small saucepan. Heat over medium heat, stirring until all sugar dissolves and the mixture is clear. Remove from heat and allow to cool completely.
  2. Blend the Raspberries: Place the fresh raspberries and lemon juice into a blender or food processor. Pulse until smooth to create a vibrant purée. For a smoother texture, strain the purée through a fine mesh sieve to remove seeds.
  3. Mix and Chill: In a mixing bowl, combine the raspberry purée with the cooled simple syrup. Stir thoroughly until well blended. Chill the mixture in the refrigerator for about 15 minutes to get it cold.
  4. Freeze the Sorbet: If using an ice cream maker, pour the chilled mixture into the machine and churn for 20 to 25 minutes until it reaches a soft-serve texture. If not using an ice cream maker, transfer the mixture to a shallow airtight container and freeze, stirring vigorously every 30 minutes for the first 2 hours to break up ice crystals and ensure smoothness.
  5. Serve and Enjoy: Once the sorbet is firm yet scoopable, serve immediately. For a firmer texture, freeze for an additional 2 hours. Scoop into bowls or cones, garnish with mint leaves or fresh raspberries, and enjoy a refreshing treat.
