Ingredients

Scale

Main Ingredients

  • 1 sheet pre-made puff pastry, thawed
  • 6 oz brie cheese, cut into small cubes or slices
  • 1 beaten egg (for egg wash)

Optional Toppings

  • Chopped nuts (pecans or walnuts)
  • Honey
  • Fresh herbs (thyme, rosemary, parsley)
  • Fig jam or cranberry sauce
  • Red pepper flakes or thin slices of jalapeño (for a spicy kick)

Instructions

  1. Prepare Your Puff Pastry: Begin by thawing your sheet of puff pastry according to package instructions so it’s pliable but still cool to the touch. Lightly flour your surface and roll out the dough slightly to smooth any creases.
  2. Cut into Squares: Using a sharp knife or pastry cutter, slice the puff pastry into evenly sized squares, roughly 2.5 inches each, to form the base for your bites.
  3. Add Brie and Toppings: Place a small cube or slice of brie in the center of each square. If you’re adding extras like nuts, jam, or herbs, sprinkle or dollop them onto the cheese now.
  4. Fold and Seal: Fold each puff pastry square in half to create a triangle or bring together the corners to make a parcel. Gently press the edges to seal the brie inside.
  5. Apply Egg Wash and Bake: Brush the tops with beaten egg for a shiny, golden finish. Arrange the bites on a lined baking sheet, then bake in a preheated oven at 400°F (200°C) for about 15 minutes, or until puffed and golden brown.

Notes

  • Keep ingredients cold to ensure the puff pastry puffs beautifully without becoming soggy.
  • Do not overfill each bite with brie to prevent leakage during baking.
  • Use a sharp knife for clean cuts to maintain the shape of the bites.
  • Bake on parchment paper to prevent sticking and simplify cleanup.
  • Monitor the baking closely to avoid burning the edges, as puff pastry bakes quickly.
  • Can be customized with herbs, jams, nuts, or spices for varied flavors.
  • Assemble ahead and refrigerate to save time on the day of serving.
  • Freeze unbaked bites on a baking sheet, then transfer to a sealed freezer bag; bake from frozen, adding a few minutes to baking time.
  • Reheat leftovers at 350°F (175°C) for 5–8 minutes to restore crispness and melty cheese.
