A quick and savory Pork Chops With Miso Mushrooms recipe that combines tender pork chops seared to perfection with umami-rich miso mushrooms. Ready in under 30 minutes, this dish balances meaty richness with earthy mushroom flavors, ideal for a delicious and easy weeknight meal.

Ingredients

Scale

Pork Chops

  • 4 bone-in or boneless pork chops, about 1-inch thick
  • Salt, to season
  • Black pepper, to season
  • 12 tbsp butter or olive oil, for searing

Miso Mushroom Sauce

  • 2 cups assorted mushrooms (shiitake, cremini, or button), sliced
  • 3 cloves garlic, minced
  • 2 tbsp miso paste (white or yellow)
  • 1 tbsp soy sauce (or tamari for gluten-free)
  • 1 tsp rice vinegar or lemon juice
  • 1 tsp sesame oil
  • 12 tbsp olive oil or butter, for sautéing
  • Fresh green onions, sliced for garnish
  • Optional: toasted sesame seeds for garnish

Instructions

  1. Prepare the Pork Chops: Season pork chops generously on both sides with salt and black pepper. Heat a skillet over medium-high heat and add butter or olive oil. Sear the pork chops until golden brown, about 3-4 minutes per side. Remove from the pan and set aside to rest briefly.
  2. Cook the Miso Mushrooms: In the same skillet, reduce heat to medium and add more oil if needed. Add the minced garlic and sliced mushrooms. Cook, stirring frequently, until the mushrooms are golden and have released their juices. Stir in the miso paste, soy sauce, and a splash of rice vinegar or lemon juice. Let simmer for 2-3 minutes for the mushrooms to absorb the umami-rich sauce.
  3. Combine and Finish: Return the pork chops to the pan, nestling them into the mushroom mixture. Spoon sauce over the chops to glaze them. Cook together for another 2 minutes to reheat and meld the flavors. Sprinkle fresh green onions on top before serving for freshness and color.

Notes

  • Choose thicker pork chops to maintain juiciness and tenderness.
  • Don’t overcrowd the pan to ensure mushrooms brown properly and don’t steam.
  • Rest the pork chops after searing to lock in juices for better texture.
  • Use white or yellow miso for a balanced, mild savory flavor.
  • Adjust salt at the end because miso and soy sauce are naturally salty.
