  • Whipped Cream – 1 cup (240 ml), stiff peaks
  • Chopped Pistachios – 1/4 cup, for garnish
  • Optional: Vanilla Extract – 1 teaspoon

Instructions

  1. Prepare the Coffee Dip: Brew strong coffee or espresso and allow it to cool completely to room temperature. This coffee will be used to briefly soak the ladyfingers, imparting that classic tiramisu flavor.
  2. Make the Pistachio Mascarpone Cream: In a bowl, whisk the egg yolks and sugar together vigorously until the mixture becomes creamy and pale. Gently fold in the mascarpone cheese and pistachio paste until smooth and well combined. In a separate bowl, whip the cream until stiff peaks form, then carefully fold it into the mascarpone mixture to create a light and airy cream.
  3. Assemble the Cups: Quickly dip each ladyfinger into the cooled coffee, ensuring not to soak them for too long to avoid sogginess. Place a layer of dipped ladyfingers at the bottom of your serving cups. Spoon a generous layer of the pistachio mascarpone cream over the ladyfingers. Repeat with another layer of dipped ladyfingers and finish with more cream on top.
  4. Chill and Garnish: Refrigerate the assembled tiramisu cups for at least 4 hours, preferably overnight, to allow the flavors to meld and the cream to set. Before serving, sprinkle chopped pistachios on top to add crunch and visual appeal.
