Ingredients

Scale

Protein

  • 46 chicken thighs, skin-on and bone-in
  • 3 tbsp peri peri sauce (adjust to heat preference)

Rice and Liquids

  • 1 ½ cups long grain rice
  • 2 ½ cups chicken broth

Vegetables and Aromatics

  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 12 bell peppers, sliced

Oils and Herbs

  • 2 tbsp olive oil
  • Fresh parsley or cilantro, chopped (for garnish)

Instructions

  1. Marinate the Chicken: Coat chicken thighs thoroughly with peri peri sauce and let them marinate for at least 20 minutes to infuse the meat with vibrant, spicy flavors.
  2. Sauté Aromatics and Vegetables: In a large pot over medium heat, heat olive oil then add chopped onions and minced garlic. Sauté until they become fragrant and translucent. Add sliced bell peppers and cook until slightly softened to build a flavorful base.
  3. Brown the Chicken: Push the sautéed vegetables to the side or temporarily remove them. Place the marinated chicken thighs skin-side down in the pot and sear until golden brown, locking in juiciness and creating a crust.
  4. Add Rice and Broth: Stir in the long grain rice, coating it with the aromatic oil and vegetable flavors. Pour in the chicken broth, scraping up the browned bits from the bottom of the pot to layer complexity into the dish.
  5. Simmer Until Cooked: Return the chicken to the pot if removed, cover, and reduce heat to low. Let everything simmer gently until the rice is tender and chicken is fully cooked, allowing the peri peri juices to permeate.
  6. Garnish and Serve: Once cooked, sprinkle freshly chopped parsley or cilantro over the top for brightness and serve immediately.

Notes

  • Marinate chicken overnight for deeper flavor infusion.
  • Use a heavy-bottomed pot to prevent scorching and ensure even cooking.
  • Keep the pot covered during simmering to cook the rice perfectly.
  • Adjust spice levels by starting with less peri peri sauce and adding more after tasting.
  • Allow the dish to rest covered for 5 minutes off heat for rice to absorb flavors fully.
