Instructions

  1. Prepare the dough: Preheat your oven to 375°F (190°C). In a large bowl, cream together softened butter, peanut butter, granulated sugar, and brown sugar until light and fluffy. Beat in the egg and vanilla extract until fully combined.
  2. Mix dry ingredients: In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined to avoid tough cookies.
  3. Shape and roll the dough balls: Form the dough into 1-inch balls, then roll each ball in extra granulated sugar for a beautiful, sugary coating that crisps up on the outside.
  4. Bake and add chocolate kisses: Place the sugar-coated balls on a parchment-lined baking sheet, leaving adequate space between them. Bake for 8 to 10 minutes, until the edges are set but the center is still soft. Immediately press a chocolate kiss into the center of each hot cookie, gently pressing it down without breaking it.
  5. Cool and enjoy: Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely. This resting time lets the chocolate set and prevents melting.
