  • Salt and freshly ground black pepper, to taste
  • Vegetable oil, for frying

  • ⅓ cup sweet chili sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar or lime juice
  • Optional: red pepper flakes, to taste

Instructions

  1. Prepare the Onion Mixture: Finely chop the yellow onions and sauté them gently in a splash of vegetable oil over medium heat until caramelized and golden brown, bringing out their natural sweetness.
  2. Combine the Batter: In a large bowl, mix the cooled sautéed onions with crumbled feta, flour (or gluten-free alternative), eggs, chopped parsley, garlic powder, salt, and pepper until you form a thick, cohesive batter ready for frying.
  3. Heat the Oil: Pour vegetable oil into a heavy skillet or frying pan and heat over medium-high heat until hot enough to sizzle batter on contact but not so hot it burns quickly.
  4. Fry the Fritters: Scoop spoonfuls of the batter into the hot oil, flatten slightly to create small patties, and fry each side for 3 to 4 minutes until golden brown and crispy. Drain excess oil on paper towels.
