Ingredients

Scale

Main Ingredients

  • 2 cups roasted red peppers (freshly roasted or well-drained jarred)
  • 3/4 cup walnuts, toasted
  • 1/4 cup breadcrumbs
  • 1/4 cup extra virgin olive oil
  • 2 tablespoons pomegranate molasses
  • 2 cloves garlic
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili flakes (adjust to taste)
  • 1/2 teaspoon salt (adjust to taste)
  • 2 tablespoons fresh lemon juice

Instructions

  1. Prepare the Peppers: If using fresh red peppers, roast them until their skins are charred and blistered, then peel off the skins thoroughly. For jarred roasted peppers, ensure they are well drained to prevent excess moisture in the dip.
  2. Blend Walnuts and Breadcrumbs: Pulse the toasted walnuts and breadcrumbs together in a food processor or blender until they form a coarse, crumbly texture that will help thicken the dip and add texture.
  3. Combine Ingredients: Add the roasted peppers, garlic, olive oil, pomegranate molasses, ground cumin, chili flakes, salt, and lemon juice to the food processor with the walnut and breadcrumb mixture. Blend until mostly smooth but still textured enough to feel hearty and satisfying.
  4. Adjust Seasoning: Taste the dip and adjust seasoning by adding more salt, lemon juice, or chili flakes according to your preference to achieve a balanced smoky, sweet, tangy, and spicy flavor.
  5. Chill and Serve: Transfer the dip to a container and refrigerate for at least 30 minutes to allow the flavors to blend deeply. Serve chilled or at room temperature with your choice of accompaniments.

Notes

  • Use high-quality roasted red peppers for the best flavor.
  • Allow the dip to chill to deepen and meld flavors.
  • Add a splash of water or olive oil to adjust thickness if needed.
  • Lightly toast walnuts to enhance their flavor.
  • Blend to your preferred texture, whether chunky or smooth.
  • For a nut-free version, substitute walnuts with roasted sunflower or pumpkin seeds.
  • Increase chili flakes or add fresh chili for extra heat.
  • Add smoked paprika for a smokier flavor.
  • Switch pomegranate molasses for maple syrup for a sweeter, vegan twist.
  • Boost tanginess by increasing lemon juice or adding apple cider vinegar.
