Molten Chocolate Crackle Pie is a decadent dessert featuring a crisp, crackly top with a warm, gooey molten chocolate center. Easy to make yet impressively rich, it balances crunchy textures with melt-in-your-mouth chocolate decadence, perfect for chocolate lovers and any special occasion.

Ingredients

Scale

Chocolate and Butter

  • 200g high-quality dark chocolate (60-70% cacao), chopped
  • 150g unsalted butter, softened

Sugars

  • 100g granulated sugar
  • 50g powdered sugar

Eggs and Flavorings

  • 4 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • A pinch of salt

Dry Ingredients

  • 60g all-purpose flour (or almond/coconut flour for gluten-free)

Instructions

  1. Prepare Your Ingredients: Chop the dark chocolate into small pieces to melt easily. Soften the butter and measure out sugar, flour, and other ingredients for a smooth baking process.
  2. Melt the Chocolate and Butter: Using a double boiler or microwave in short bursts, gently melt the chopped chocolate and softened butter together. Stir often until smooth and lump-free.
  3. Whisk the Eggs and Sugar: In a separate bowl, beat the eggs with both granulated and powdered sugar until pale and slightly fluffy to aerate the batter.
  4. Combine Ingredients and Add Flour: Gradually fold the melted chocolate and butter mixture into the egg-sugar mixture, mixing gently. Sift in the flour, then add vanilla extract and a pinch of salt, folding carefully to keep the batter light.
  5. Bake Until Crackled on Top: Pour the batter into a greased pie dish and bake at 175°C (350°F) for 20-25 minutes. Watch closely until the top is crisp and crackled while the center remains molten. Remove promptly to avoid overbaking.

Notes

  • Use quality chocolate for best flavor and texture.
  • Do not overbake to keep the molten center intact.
  • Use room temperature eggs for smoother batter incorporation.
  • Chilling the batter before baking can enhance the crackle effect.
  • Let the pie rest a few minutes before slicing to prevent a runny center.
