  • 3 tbsp white miso paste
  • 2 tbsp soy sauce (or tamari for gluten-free)
  • 1 tbsp mirin or rice vinegar
  • 1 tbsp honey or brown sugar
  • 1 tsp fresh grated ginger
  • 2 cloves garlic, minced

Instructions

  1. Prepare the glaze: Whisk together the white miso paste, soy sauce, mirin (or rice vinegar), honey, grated ginger, and minced garlic in a small bowl until smooth and well combined.
  2. Marinate the salmon: Place salmon fillets in a shallow dish or zip-top bag and pour half of the miso glaze over them. Refrigerate for 15-30 minutes to allow flavors to soak in.
  3. Preheat your oven: Set the oven to 400°F (200°C) and line a baking tray with parchment paper or lightly oil it to prevent sticking.
  4. Bake the salmon: Arrange the marinated salmon skin-side down on the tray. Brush with the remaining miso glaze. Bake for 10-12 minutes, then switch oven to broil for 2-3 minutes to caramelize the glaze without overcooking.
  5. Rest and serve: Remove salmon from oven and let rest for a couple of minutes to keep it juicy and allow flavors to settle before serving.
