Mini Crème Brûlée Cheesecakes

Mini Crème Brûlée Cheesecakes combine the creamy richness of classic cheesecake with the delicate, caramelized top of crème brûlée. These elegant yet simple bite-sized desserts feature a buttery graham cracker crust, a luscious custard-like filling, and a satisfyingly crunchy caramelized sugar topping. Perfect for parties, date nights, or any special occasion, they offer a customizable, indulgent treat in a perfect portion size.

Ingredients

Scale

For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 6 tablespoons unsalted butter, melted
  • 2 tablespoons granulated sugar

For the Cheesecake Filling

  • 16 ounces cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract

For the Caramelized Topping

  • Granulated sugar, for sprinkling

Instructions

  1. Prepare the crust: Mix the graham cracker crumbs, melted butter, and sugar together until the mixture resembles damp sand. Press this mixture evenly into the bottoms of mini cheesecake molds or a muffin tin lined with paper cups. Chill the crust in the refrigerator while preparing the filling.
  2. Make the cheesecake filling: Beat the softened cream cheese with granulated sugar until smooth and fluffy. Gradually add the eggs one at a time, mixing well after each addition. Then, pour in the heavy cream and vanilla extract and mix until a creamy, slightly thick batter forms.
  3. Pour and bake: Evenly distribute the cheesecake filling over the chilled crusts. Bake at 325°F (160°C) until the edges are set but the center still jiggles slightly, ensuring a smooth, custard-like texture.
  4. Chill before caramelizing: Let the cheesecakes cool to room temperature, then refrigerate for several hours or overnight to fully set the filling.
  5. Caramelize the sugar topping: Just before serving, sprinkle an even layer of granulated sugar over each cheesecake. Use a kitchen torch to melt and caramelize the sugar until it forms a golden, crispy crust. Allow it to cool briefly to harden before enjoying.

Notes

  • Use room temperature ingredients to ensure a smooth, lump-free batter.
  • Don’t overbake; a slight jiggle in the center means perfect creaminess.
  • A kitchen torch yields the best caramelized topping, but a broiler can be used cautiously.
  • Chilling the cheesecakes overnight improves texture and flavor.
  • Press the crust firmly but avoid compressing it into a hard base.
