Ingredients

Scale

Pasta

  • 1 cup orzo pasta

Vegetables & Herbs

  • 1 cup cucumbers, chopped
  • 1 cup cherry tomatoes, halved
  • 1/4 cup Kalamata olives, pitted
  • 1/4 cup red onion, thinly sliced
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh mint, finely chopped

Cheese

  • 1/3 cup feta cheese, crumbled

Dressing

  • 2 tablespoons fresh lemon juice
  • 1 clove garlic, minced
  • 3 tablespoons extra virgin olive oil
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Cook the Orzo: Bring a large pot of salted water to a boil and cook the orzo according to package instructions until al dente, about 8 to 10 minutes. Drain and rinse under cold water to stop the cooking process and cool the pasta for the salad.
  2. Prepare the Vegetables and Herbs: While the orzo cools, chop cucumbers, halve cherry tomatoes, slice red onion thinly, and finely chop fresh parsley and mint. Set these colorful ingredients aside.
  3. Make the Dressing: In a small bowl, whisk together freshly squeezed lemon juice, minced garlic, extra virgin olive oil, salt, and pepper until well combined. This zesty dressing will bring bright flavor to the salad.
  4. Combine and Toss: In a large bowl, mix the cooled orzo with the chopped vegetables, olives, and crumbled feta cheese. Pour the dressing over the salad and toss gently to coat everything evenly.
  5. Chill and Serve: Refrigerate the Mediterranean Orzo Pasta Salad for at least 30 minutes to allow the flavors to meld. Serve cool or at room temperature for the best taste experience.

Notes

  • Avoid overcooking orzo to maintain its slightly firm texture that holds up nicely in salads.
  • Letting the salad rest in the fridge enhances the flavor fusion of all ingredients.
  • Use fresh parsley and mint to add bright and lively aroma.
  • Taste before serving and add extra salt, pepper, or lemon juice if needed.
  • Ensure vegetables like tomatoes and cucumbers are well drained to prevent a soggy salad.
