  • 34 garlic cloves, gently crushed (unpeeled)
  • 1 tablespoon dried oregano
  • Fresh basil, a handful (optional, for garnish)
  • Lemon zest from 1 lemon (optional, for garnish)

  • 3 tablespoons extra virgin olive oil
  • 1/4 teaspoon red pepper flakes
  • Freshly ground black pepper, to taste

Instructions

  1. Prepare Ingredients: Preheat your oven to 400°F (200°C). Rinse the cherry tomatoes and pat them dry. Gently crush the garlic cloves without peeling to allow flavor to infuse during baking. Cut the feta into a thick block and set aside.
  2. Assemble in Baking Dish: Place the block of feta in the center of a small baking dish. Surround it with halved cherry tomatoes and crushed garlic cloves. Drizzle generously with extra virgin olive oil and sprinkle dried oregano and red pepper flakes evenly over the top.
  3. Bake Until Bubbling: Bake the dish in the preheated oven for about 20 minutes, or until the tomatoes have released their juices and the feta is soft and slightly golden on top. The aroma will be rich and inviting.
  4. Garnish and Serve: Remove from the oven and immediately add freshly chopped basil leaves and a sprinkle of black pepper. If desired, zest a little lemon over the dish to brighten the flavors before serving. Serve warm with crusty bread or pita chips for dipping.
