Instructions

  1. Prepare the Meatballs: In a large bowl, combine ground meat, bread crumbs, egg, finely chopped onion, garlic, parsley, salt, and pepper. Mix gently until just combined, taking care not to overmix. Shape the mixture into small 1-inch meatballs and set aside.
  2. Sauté Vegetables: Heat olive oil in a large pot over medium heat. Add diced carrots, celery, and onion and cook, stirring occasionally, until vegetables are tender and fragrant, about 5-7 minutes.
  3. Build the Broth: Pour in the beef or chicken broth along with diced tomatoes and oregano. Bring the mixture to a gentle boil, then reduce heat to a simmer.
  4. Cook the Meatballs: Carefully add the prepared meatballs into the simmering broth. Cook uncovered for 15-20 minutes, or until meatballs are cooked through and tender.
