Ingredients

Scale

Dry Ingredients

  • 1 ¾ cups all-purpose flour
  • ¾ cup cocoa powder
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • ½ tsp salt
  • 2 cups sugar

Wet Ingredients

  • 2 large eggs
  • 1 cup milk or buttermilk
  • ½ cup unsalted butter or vegetable oil
  • 2 tsp vanilla extract
  • 1 cup hot water or hot coffee

Instructions

  1. Prepare Your Ingredients: Preheat your oven to 350°F (175°C). Grease and flour your cake pans to prevent sticking. Measure out all ingredients precisely for perfect texture and flavor balance.
  2. Mix Dry Ingredients: In a large bowl, sift together the all-purpose flour, cocoa powder, baking powder, baking soda, and salt. This step avoids lumps and ensures even leavening.
  3. Cream Butter and Sugar: In a separate bowl, beat the butter (or oil) and sugar until light and fluffy to incorporate air for a tender crumb.
  4. Add Eggs and Vanilla: Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract for moisture and richness.
  5. Combine Wet and Dry Ingredients: Alternate adding the dry mixture and milk (or buttermilk) to the creamed butter mixture, beginning and ending with dry ingredients. Mix gently just until combined to keep batter light.
  6. Incorporate Hot Water or Coffee: Slowly stir in hot water or hot coffee to the batter to intensify chocolate flavor and ensure ultra-moist texture.
  7. Bake: Pour batter evenly into prepared pans and bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. Allow cakes to cool slightly before removing from pans.
  8. Frost and Decorate: Once completely cooled, frost with your favorite frosting or ganache. Optionally, add sprinkles, nuts, or fresh fruit for a special touch.

Notes

  • Room Temperature Ingredients: Use room temperature eggs and butter for smooth blending.
  • Measure Flour Properly: Spoon and level flour instead of scooping to avoid dense cake.
  • Don’t Overmix: Mix just until combined to keep crumb light and tender.
  • Use Fresh Cocoa Powder: Fresh cocoa offers better flavor and color.
  • Cool Completely: Avoid frosting warm cake to prevent melting or sliding.
