Ingredients

Scale

Main Ingredients

  • 3 ripe fresh mangoes, peeled and chopped
  • 2 tablespoons Tajín seasoning (adjust to taste)
  • 2 tablespoons fresh lime juice
  • 1/4 cup sugar or agave nectar (or to taste)
  • 1/2 cup water

Instructions

  1. Prepare the Mango Puree: Peel and chop ripe mangoes into chunks. Place them in a blender along with lime juice, sugar or agave nectar, and water. Blend until the mixture is smooth and well combined, ensuring no fibrous chunks remain for a silky sorbet.
  2. Add Tajín and Adjust Flavor: Sprinkle in the Tajín seasoning gradually, blending carefully after each addition. Taste frequently to find the perfect balance of spicy, tangy, and sweet that suits your palate.
  3. Chill the Mixture: Transfer the mango mixture to a bowl and chill it in the refrigerator for at least one hour. Cooling this base helps the sorbet develop better texture and flavor when frozen.
  4. Freeze the Sorbet: If you have an ice cream maker, pour the chilled mixture in and churn according to the manufacturer’s instructions until it reaches a scoopable consistency. Otherwise, place the bowl in the freezer and stir vigorously every 30 minutes for 2-3 hours to prevent icy crystals from forming.
  5. Portion and Serve: Scoop the sorbet into individual cups, then sprinkle a little extra Tajín on top for garnish and a final kick. Serve immediately or freeze until ready to enjoy.

Notes

  • Choose Ripe Mangoes: For the best flavor and sweetness, pick mangoes that give slightly to pressure and smell fragrant.
  • Balance is Key: Don’t add all your Tajín at once—adjust slowly to keep the sorbet from becoming too overpowering.
  • Use Fresh Lime Juice: Freshly squeezed lime juice elevates brightness much more than bottled options.
  • Keep Stirring Well: If freezing without an ice cream maker, consistent stirring ensures a smoother sorbet without ice crystals.
  • Serve Cold, Eat Fast: Sorbet melts quickly, so have your guests ready to dive in once served for the best experience.
