Ingredients

Scale

Protein & Pasta

  • 2 cups cooked shredded or diced chicken breast
  • 8 ounces whole wheat or regular penne pasta

Sauces & Dairy

  • 1/2 cup buffalo wing sauce
  • 4 ounces low-fat cream cheese, softened
  • 1/2 cup nonfat Greek yogurt
  • 1 cup low-moisture mozzarella cheese, shredded
  • 1/2 cup reduced-fat cheddar cheese, shredded

Spices & Vegetables

  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 cup chopped celery (optional)
  • 1/4 cup chopped green onions for garnish

Instructions

  1. Cook the Pasta: Bring a large pot of salted water to a boil, and cook the penne according to package instructions until al dente. Drain and set aside to cool slightly.
  2. Prepare the Chicken Mixture: In a large bowl, combine shredded cooked chicken with buffalo sauce, low-fat cream cheese, nonfat Greek yogurt, garlic powder, and onion powder. Mix until creamy and well coated.
  3. Combine Pasta and Chicken Sauce: Add the cooked penne to the chicken mixture and fold gently to evenly coat the pasta in the buffalo cream mixture. If using, stir in chopped celery now for added crunch.
  4. Assemble the Bake: Transfer the pasta and chicken mixture into a greased baking dish. Sprinkle the low-moisture mozzarella and reduced-fat cheddar cheeses evenly over the top for a cheesy crust.
  5. Bake Until Bubbly: Pop the dish into a preheated oven at 375°F (190°C) and bake for 20-25 minutes until the cheeses are melted, golden, and bubbly. Let it rest briefly before serving.

Notes

  • Use day-old cooked chicken for convenience and better flavor absorption.
  • Don’t overcook pasta; keep it slightly firm as it will cook more in the oven.
  • Mix sauces thoroughly to achieve a smooth and creamy texture.
  • Adjust cheese quantities according to your taste preferences.
  • Allow the bake to rest for 5 minutes after removing from the oven to firm up.
