Lazy Lasagna

Lazy Lasagna

Lazy Lasagna is a quick, simple, and hearty dish that delivers all the comforting flavors of classic lasagna with minimal prep and straightforward ingredients. Perfect for busy weeknights, it uses no-boil noodles and a rich meat sauce layered with creamy ricotta, spinach, and melted cheeses, baked to bubbly perfection in under 40 minutes.

Ingredients

Scale

Meat Sauce

  • 1 lb ground beef or turkey
  • 2 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 cups marinara sauce
  • 1 tsp Italian seasoning

Cheese and Layering

  • 1 cup ricotta cheese
  • 1 handful chopped fresh spinach (optional)
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 810 no-boil lasagna noodles

Seasonings and Extras

  • Salt and pepper to taste

Instructions

  1. Prepare the Meat Sauce: Heat a skillet over medium heat and sauté minced garlic and chopped onion until fragrant. Add ground beef or turkey and cook thoroughly, breaking it up as it browns. Stir in marinara sauce and Italian seasoning, then simmer for about 5 minutes to let the flavors meld.
  2. Combine Cheeses and Spinach: In a mixing bowl, combine ricotta cheese with a handful of chopped spinach (if using) and a pinch of salt and pepper. This mixture will add creamy texture and a bit of freshness to your layers.
  3. Layer the Ingredients: In a baking dish, spread a thin layer of the meat sauce. Layer no-boil lasagna noodles on top, then spread some ricotta-spinach mixture, followed by a sprinkle of mozzarella and Parmesan cheese. Repeat layers until ingredients are used up, finishing with a generous cheese topping for that perfect melt.
  4. Bake and Serve: Cover the dish with foil and bake at 375°F (190°C) for 25 minutes. Remove the foil and bake for an additional 10 minutes to brown the cheese. Let it sit for 5-10 minutes before slicing to allow the layers to set nicely.

Notes

  • Use no-boil noodles to save time and eliminate the boiling step without sacrificing texture.
  • Let the lasagna rest for 5-10 minutes after baking to help it hold its shape when cutting.
  • Double the sauce to keep the dish moist and bursting with flavor, especially when using no-boil noodles.
  • Add fresh herbs like basil or parsley before serving to brighten the dish.
  • Incorporate a shredded cheese blend with provolone or Fontina alongside mozzarella for extra depth.
