Meatloaf Layer

  • 1.5 pounds ground beef
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 1 large egg
  • ¾ cup bread crumbs
  • ½ cup ketchup
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste

Mashed Potato Topping

  • 4 large potatoes, peeled and chopped
  • 4 tablespoons butter
  • ⅔ cup milk
  • Salt and pepper to taste

Optional

  • 1 cup shredded cheddar cheese

Instructions

  1. Prepare the Meatloaf Mixture: In a large bowl, combine ground beef, finely chopped onion, minced garlic, egg, bread crumbs, ketchup, Worcestershire sauce, salt, and pepper. Mix gently but thoroughly until evenly incorporated to keep the meatloaf tender.
  2. Shape and Partially Bake the Meatloaf: Transfer the meat mixture into a greased casserole dish, pressing it firmly into an even layer. Bake at 350°F (175°C) for about 25 minutes to start cooking the meat through.
  3. Make Mashed Potatoes: While the meatloaf bakes, boil the peeled and chopped potatoes in salted water until tender, about 15 minutes. Drain well and mash with butter, warm milk, salt, and pepper until smooth and creamy.
  4. Layer Mashed Potatoes Over Meatloaf: Remove the partially baked meatloaf from the oven and evenly spread the mashed potatoes on top.
  5. Add Cheese and Finish Baking: Sprinkle shredded cheddar cheese over the mashed potatoes if using. Return the casserole to the oven and bake an additional 20–25 minutes until the cheese is melted, golden, and the dish is heated through.

  • Use room temperature ingredients to help the meatloaf bind better and cook evenly.
  • Don’t skip the Worcestershire sauce for enhanced umami flavor.
  • If the meat mixture is too wet, add an extra tablespoon of bread crumbs to maintain firmness.
