Ingredients

Scale

Base Ingredients

  • 2 cups rolled oats
  • 1/2 cup almonds, chopped
  • 1/2 cup walnuts, chopped
  • 1/2 cup pecans, chopped
  • 2 tablespoons chia seeds
  • 2 tablespoons pumpkin seeds
  • 2 tablespoons flax seeds

Wet Ingredients

  • 1/3 cup honey (or maple syrup or agave)
  • 1/4 cup coconut oil or olive oil
  • 1 teaspoon vanilla extract

Spices

  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg

Dried Fruits (to add after baking)

  • 1/2 cup dried cranberries
  • 1/2 cup raisins
  • 1/2 cup dried apricots, chopped

Instructions

  1. Preheat and Prepare: Preheat your oven to 325°F (165°C) and line a baking sheet with parchment paper to ensure easy cleanup and even baking.
  2. Combine Dry Ingredients: In a large bowl, mix the rolled oats, chopped nuts (almonds, walnuts, pecans), and seeds (chia, pumpkin, flax) evenly to form the crunchy base for the granola and promote even roasting.
  3. Mix Wet Ingredients: In a smaller bowl, whisk together your choice of sweetener (honey, maple syrup, or agave) and coconut or olive oil until smooth. Stir in vanilla extract, cinnamon, and nutmeg to add warmth and signature flavor.
  4. Combine and Toss: Pour the wet mixture over the dry ingredients and gently toss until everything is evenly coated, helping to create delicious clusters during baking.
  5. Bake and Stir: Spread the granola mixture evenly on the prepared baking sheet. Bake for 20 to 25 minutes, stirring halfway through to ensure even toasting and to prevent burning.
  6. Add Dried Fruits and Cool: After baking, let the granola cool completely on the baking sheet before folding in dried cranberries, raisins, and chopped dried apricots to maintain their chewy texture.

Notes

  • Toss the granola thoroughly for an even, golden coating on all ingredients.
  • Keep a close eye on baking after 15 minutes to avoid burning.
  • Spread granola in a thin, even layer to promote consistent baking and crunch.
  • Cool completely before storing to maintain crispness.
  • Adjust sweetener type and amount to your preference.
