Instructions

  1. Prepare the Blueberry Swirl: Heat blueberries with honey and lemon zest in a small saucepan over medium heat until they soften and release juices. Mash slightly to form a chunky compote, then set aside to cool.
  2. Mix the Base: In a large bowl, combine Greek yogurt, rolled oats, chia seeds, honey or maple syrup, vanilla extract, and lemon zest if using. Stir gently until all ingredients form a thick, uniform mixture.
  3. Assemble the Bars: Line a baking tray or loaf pan with parchment paper. Spread half of the yogurt-oat mixture evenly in the pan. Spoon dollops of cooled blueberry compote on top and swirl gently with a knife or skewer to create a marbled effect. Spread the remaining oat mixture on top and smooth lightly.
  4. Freeze Until Set: Place the pan in the freezer for at least 4 hours or overnight until bars are firm and fully set.
  5. Slice and Serve: Remove the set block using parchment edges and cut into bars of desired size. Keep frozen until ready to enjoy.
