Instructions

  1. Brown the Ground Beef: Heat a large pot over medium heat. Add the ground beef and cook until browned and no longer pink, breaking it apart as it cooks. Drain excess fat for a leaner soup base.
  2. Sauté Onions, Garlic, and Vegetables: Add chopped onions, minced garlic, and optional carrots and celery to the pot. Cook until softened and fragrant, about 5 minutes, building the savory flavor foundation.
  3. Add Potatoes and Broth: Stir in the peeled, diced potatoes and beef broth. Season with salt, pepper, thyme, and bay leaves. Bring to a boil, then reduce heat and simmer until potatoes are tender, about 15-20 minutes.
  4. Stir in Milk or Cream: Slowly add the milk or cream, stirring gently to combine. Heat without boiling to prevent curdling and create a creamy texture.
