Ingredients

Scale

Protein

  • 1 lb lean ground turkey

Vegetables

  • 23 bell peppers (a mix of colors), sliced into thin strips
  • 1 medium onion, finely chopped
  • 23 garlic cloves, minced
  • 2 green onions, sliced (for garnish)

Seasonings & Sauces

  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1/2 teaspoon ground black pepper
  • Optional: 1/4 teaspoon chili flakes or 1 fresh chili, chopped (for spice)

Oils

  • 1 tablespoon olive oil or sesame oil (plus extra if needed for sautéing)

Instructions

  1. Prepare Your Ingredients: Finely chop the onions, mince the garlic, and slice the bell peppers into thin strips to have everything ready before cooking for a smooth process.
  2. Cook the Ground Turkey: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the ground turkey and cook, breaking it up with a spatula, until fully browned with no pink remaining (5-7 minutes). Season lightly with salt and pepper.
  3. Sauté the Aromatics: Push the cooked turkey to one side of the pan. Add a little more oil if needed. Add onions and garlic, cooking about 2 minutes until fragrant and starting to soften, stirring frequently to prevent burning.
  4. Add the Bell Peppers: Stir in the sliced bell peppers and cook for another 4-5 minutes until they soften slightly but retain some crunch, preserving their vibrant color and sweetness.
  5. Combine and Season: Mix the turkey back in with the veggies if separated. Pour in the soy sauce, sprinkle black pepper and optional chili flakes, then toss everything together on heat for 1-2 minutes to blend flavors perfectly.
  6. Garnish and Serve: Remove from heat and sprinkle sliced green onions on top. Serve hot and enjoy a comforting, healthy dinner.

Notes

  • Don’t overcrowd the pan; cook turkey in batches if needed to ensure proper browning.
  • Use fresh bell peppers for the best flavor and crunchy texture.
  • Start with less soy sauce and add more gradually to avoid oversalting.
  • Cook over high heat to achieve a good sear and keep veggies crisp.
  • A non-stick or cast iron skillet helps prevent sticking and ensures even cooking.
  • Let the stir-fry rest for a minute off the heat before serving to meld flavors.
