Ingredients

Scale

Chicken

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil (for grilling and seasoning)
  • Salt, to taste
  • Black pepper, to taste

Salad Base

  • 1 large head romaine lettuce
  • 1 cup croutons
  • 1/2 cup freshly shaved or grated Parmesan cheese
  • 1 tbsp lemon juice

Caesar Dressing (Homemade)

  • 1/2 cup mayonnaise
  • 1 clove garlic, minced
  • 1 tbsp lemon juice
  • 1 tsp Dijon mustard
  • 1 tsp anchovy paste (optional)
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese

Optional Garnishes & Variations

  • Chili flakes or spicy aioli for heat
  • Cherry tomatoes, avocado, roasted peppers for extra veggies
  • Alternative proteins: grilled shrimp, salmon, tofu
  • Different greens: kale, spinach, arugula
  • Fresh parsley and lemon wedges for garnish

Instructions

  1. Prepare the Chicken: Trim the chicken breasts and season with salt, pepper, and a drizzle of olive oil. Preheat your grill or grill pan over medium-high heat. Grill the chicken about 6-7 minutes per side until fully cooked with a nice char. Let it rest to retain juiciness before slicing.
  2. Prep the Romaine Lettuce: While the chicken cooks, wash and dry the romaine leaves thoroughly. Tear or chop into bite-sized pieces. Place in a large salad bowl to catch dressing and juices.
  3. Make the Caesar Dressing: For homemade dressing, whisk together mayonnaise, minced garlic, lemon juice, Dijon mustard, anchovy paste (optional), olive oil, and grated Parmesan until smooth and creamy. Alternatively, use store-bought dressing for convenience.
  4. Assemble the Salad: Arrange sliced grilled chicken on top of the romaine. Drizzle generously with Caesar dressing. Sprinkle with croutons and freshly shaved Parmesan cheese. Toss gently to combine all flavors without wilting the greens.
  5. Final Touches: Give the salad a last squeeze of lemon juice to brighten the flavors. Garnish with freshly ground black pepper, extra Parmesan shavings, chopped parsley, or a lemon wedge as desired. Serve immediately for best texture and freshness.

Notes

  • Pound chicken breasts to an even thickness for uniform cooking and juiciness.
  • Toss salad lightly with dressing to avoid soggy greens.
  • Oil grill grates before cooking to prevent sticking and get perfect grill marks.
  • Use fresh, high-quality ingredients like freshly grated Parmesan and crisp lettuce for best flavor.
  • Make your own croutons by toasting cubed bread with olive oil and garlic for extra crunch and aroma.
  • Store grilled chicken and salad components separately to prevent sogginess when making ahead.
