Ingredients

Scale

Main Ingredients

  • 4 thick slices of bread (sourdough, whole wheat, rye, or your favorite)
  • 1 cup fresh spinach leaves
  • 46 oz cheese (cheddar, mozzarella, provolone, or Swiss, sliced or shredded)
  • 2 tablespoons butter (for spreading on the bread)

Optional Extras

  • 1 teaspoon olive oil (for sautéing spinach)
  • Salt, to taste
  • Black pepper, to taste
  • Garlic powder, optional
  • Fresh herbs like parsley or chives, for garnish

Variations (optional)

  • Sun-dried tomatoes, fresh basil, and Parmesan cheese for Italian style
  • Sliced jalapeños or cayenne pepper for a spicy kick
  • Dairy-free cheese and vegan butter for a vegan version
  • Sautéed mushrooms with garlic for an earthy mushroom boost
  • Grilled chicken or crispy bacon for a protein-packed option

Instructions

  1. Prepare the spinach: Lightly sauté fresh spinach in a pan with a small amount of olive oil until wilted but still bright green. Season lightly with salt and pepper to enhance flavor and pat dry to remove excess moisture.
  2. Butter the bread: Spread a thin, even layer of butter on one side of each bread slice. This will create a golden, crispy outer crust when grilled.
  3. Assemble the sandwich: On the unbuttered side of one bread slice, layer cheese evenly, add the sautéed spinach on top, then add more cheese to help hold everything together. Place the second bread slice on top with the buttered side facing out.
  4. Grill the sandwich: Heat a skillet over medium-low heat. Place the sandwich in the skillet and grill for about 3-4 minutes per side, or until the bread is golden brown and cheese is melted perfectly. Press gently with a spatula for even cooking and compact bite.
  5. Serve hot and enjoy: Remove the sandwich from heat, slice in half if desired, and serve immediately. Garnish with fresh herbs or a drizzle of balsamic glaze if preferred.

Notes

  • Cook on medium-low heat to allow cheese to melt fully without burning the bread.
  • Use plenty of cheese for a creamy, cohesive sandwich.
  • Pat spinach dry after sautéing to avoid a soggy sandwich.
  • Try different breads like rye, multigrain, or baguette for unique flavors and textures.
  • Wrap leftovers tightly and store in the refrigerator for up to 2 days; reheat gently in a skillet.
  • For freezing, cool completely, wrap securely, freeze up to 1 month, and thaw overnight before reheating.
  • Vegan adaptations include using plant-based butter and dairy-free cheese.
