Ingredients

Scale

Phyllo Cups Base

  • Ready-made phyllo shells – about 20 cups

Greek Salad Filling

  • 1/2 cup cucumber, finely chopped
  • 1/2 cup cherry tomatoes, finely chopped
  • 1/4 cup red onion, finely chopped
  • 1/4 cup Kalamata olives, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 2 tablespoons fresh herbs (parsley or dill), chopped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. Prepare the Salad Filling: Finely chop cucumber, cherry tomatoes, red onion, and Kalamata olives. Crumble the feta cheese and chop fresh herbs. Combine all ingredients in a bowl. Drizzle with olive oil and fresh lemon juice, season with salt and pepper, then gently toss to mix without breaking up the feta too much.
  2. Arrange the Phyllo Cups: Lay out the ready-made phyllo cups on a serving platter. These shells need no additional baking and provide a perfectly crisp, flaky base for the filling.
  3. Fill Each Phyllo Cup: Using a small spoon, carefully fill each phyllo cup with the prepared Greek salad mixture. Distribute the ingredients evenly so each bite offers a balanced combination of flavors and textures.
  4. Garnish and Serve: Optionally, lightly sprinkle some extra chopped herbs or a tiny drizzle of olive oil over the filled cups. Serve immediately to maintain the phyllo cups’ crispness and the salad’s freshness.

Notes

  • Use fresh and ripe ingredients for the best flavor.
  • Do not overfill phyllo cups to prevent sogginess and ease of eating.
  • Chop all vegetables uniformly to ensure balanced bites.
  • Dress the salad lightly with olive oil and lemon juice to avoid soggy cups.
  • Assemble the cups just before serving to keep them crisp.
  • Store leftover salad filling separately in an airtight container in the refrigerator.
  • Keep phyllo cups at room temperature in a sealed bag to maintain their crispness.
