Ingredients

Scale

Chicken

  • 6 bone-in, skin-on chicken thighs
  • 3 tablespoons fresh lemon juice
  • 1 tablespoon lemon zest
  • 3 garlic cloves, minced (or whole if preferred)
  • 3 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste

Potatoes

  • 2 pounds Yukon Gold or red potatoes, washed and halved
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • Optional extra herbs (oregano, thyme, rosemary) for tossing

Additional

  • 1/4 cup chicken broth or water

Instructions

  1. Prepare the Marinade: In a large bowl, whisk together fresh lemon juice, lemon zest, olive oil, minced garlic, dried oregano, thyme, salt, and pepper to create a zesty herb marinade that will flavor the chicken and potatoes.
  2. Marinate the Chicken: Add the bone-in, skin-on chicken thighs to the marinade, turning each piece until fully coated. Let them marinate for at least 30 minutes, or preferably overnight in the refrigerator for maximum flavor infusion.
  3. Prepare the Potatoes: Wash and halve the potatoes, then toss them with olive oil, salt, pepper, and any optional extra herbs to enhance their flavor.
  4. Arrange Chicken and Potatoes: Preheat the oven to 400°F (200°C). In a baking dish or sheet pan, place the marinated chicken thighs skin-side up in a single layer. Arrange the prepared potatoes evenly around the chicken to ensure even roasting.
  5. Roast Until Golden: Pour chicken broth or water into the dish to keep the ingredients moist during cooking. Roast in the preheated oven for 40 to 45 minutes, until the chicken skin is crispy and the internal temperature reaches 165°F (75°C), and potatoes are tender and golden brown.
  6. Rest and Serve: Remove the chicken from the oven and let it rest for a few minutes to allow the juices to redistribute, resulting in tender, juicy bites. Serve garnished with fresh parsley or dill if desired.

Notes

  • Pat chicken skin dry before marinating to ensure extra crispy skin.
  • Bone-in thighs are preferred for juiciness and flavor over chicken breasts.
  • Do not overcrowd the pan; give chicken and potatoes space for even browning.
  • Marinating longer enhances lemon and herb flavors deeply.
  • Use fresh lemon zest for the brightest citrus aroma and taste.
