Ingredients

Scale

Pastry

  • Cold Puff Pastry Sheets (well chilled, quantity as needed for desired number of pastries)

Cream Cheese Filling

  • 8 oz (225g) Full-fat Cream Cheese, softened
  • 1/4 cup (30g) Powdered Sugar
  • 1/2 tsp Vanilla Extract
  • Optional: 1 tsp Lemon Zest

Fruit Filling

  • 1 cup Cherry Pie Filling or 1 cup Fresh Pitted Cherries

Egg Wash

  • 1 Egg
  • 1 tbsp Milk

Instructions

  1. Prepare the Cream Cheese Filling: In a medium bowl, combine softened cream cheese, powdered sugar, and vanilla extract. Beat until smooth and creamy, ensuring no lumps remain. Add lemon zest if desired for a fresh citrus note.
  2. Roll Out and Cut Puff Pastry: On a lightly floured surface, roll out cold puff pastry sheets to smooth out creases. Cut into rectangles or squares approximately 4 by 5 inches, depending on preferred serving size.
  3. Assemble the Pastries: Place a generous spoonful of cream cheese filling in the center of half the pastry pieces. Add a layer of cherry pie filling or fresh pitted cherries on top. Cover each with a matching pastry piece and press edges firmly with a fork to seal thoroughly.
  4. Brush with Egg Wash and Bake: Lightly beat an egg with milk and brush over the tops of each pastry for a golden, glossy finish. Bake in a preheated oven at 400°F (200°C) for 15-20 minutes, until the pastries are puffed and golden brown.
  5. Cool and Enjoy: Remove pastries from oven and transfer to a wire rack to cool slightly. Allow filling to set before serving to avoid burns and ensure perfect texture.

Notes

  • Keep all ingredients cold to maintain flakiness and proper rising of pastry during baking.
  • Do not overfill pastries to avoid leaking and soggy edges.
  • Seal edges firmly using a fork to prevent spills in the oven.
  • Use high-quality cherry pie filling or ripe fresh cherries for best flavor.
  • For extra shine, brush a second layer of egg wash halfway through baking.
  • Freezing Tip: Freeze unbaked assembled pastries on a sheet until firm, then store in a freezer bag. Bake from frozen by increasing baking time by a few minutes.
  • Reheat leftovers in a 350°F (175°C) oven for 5-7 minutes to restore flakiness; avoid microwaving.
