Instructions

  1. Prepare the Filling: Finely chop onions, garlic, carrots, and green beans. In a large skillet over medium heat, sauté onions and garlic until fragrant and translucent. Add ground meat and cook until no longer pink, breaking it apart with a spatula. Stir in carrots, green beans, soy sauce, salt, and pepper; cook until the vegetables are tender but still slightly crunchy. Remove from heat and let cool slightly.
  2. Assemble the Lumpia: Place one spring roll wrapper on a clean surface with a corner facing you like a diamond. Spoon about two tablespoons of the filling near the corner closest to you. Fold that corner over the filling, then fold both sides inward to enclose the filling. Roll tightly upward toward the opposite corner. Seal the edge with a bit of water or beaten egg to prevent unwrapping during frying.
  3. Heat the Oil: Pour cooking oil into a deep frying pan or wok to about 1 inch deep. Heat over medium-high heat until shimmering but not smoking, approximately 350°F (175°C) if using a thermometer.
  4. Fry the Lumpia: Carefully add the lumpia to the hot oil in batches without overcrowding. Fry for 3 to 5 minutes, turning occasionally, until golden brown and crispy all over. Remove with a slotted spoon and drain on paper towels to remove excess oil.
  5. Serve and Enjoy: Serve lumpia warm with your favorite dipping sauce such as sweet chili, vinegar with garlic, or soy sauce with calamansi. Garnish optionally with chopped green onions or toasted sesame seeds.
